Indian Plum Cake by The Clock Tower

This recipe will show you how to make an INCREDIBLE gluten free Indian plum cake that will wow your guests and make you the host with the most! This recipe is from The Clock Tower's very own bakers. The Sidmouth bakery is one of the UK's best!

What You Need: 
  • 4 eggs
  • 115g light brown sugar
  • 1 can prunes (fruit and juice)
  • 115g butter
  • 115g gluten free flour
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 115g ground almonds
  • 115g raisins
  • 115g caramelised ginger
What You Do: 
  1. Start by chopping the ginger
  2. Add the butter and brown sugar, then mix and add the eggs
  3. Add flour, mixed spice, prunes and ginger
  4. Mix some more
  5. Now time for ground almonds, raisins, prune juice
  6. Grease a large circular cake tin and add baking paper around the base and edges
  7. Pour cake mix
  8. Bake for 1h 50, gas mark 2 on 150C
  9. Decorate with icing sugar and serve with a cup of tea
